Baked dried fava beans – Minestra di fave secche

 
Ingredients:

400 gr. dried fava beans

extra virgin olive oil

salt


Preparation:

Seak the fava beans in a pan covered with water for a period 12 hours.

Drain an cook them at slow heat,for 3 hours, in a full of salted water

After the first cooking, mesh the fava beans with a ….continue to cook them stirring frequently

Drizzle with olive oil and serve

Note: Yo may serve the purée with rapini ( cime di rape ) as a side dish
