It is produced in 5 different ways:

White dry or sparkling Chardonnay Red Rose’ – dry or sparkling Negroamaro.

It comes fro grapes cultivated in the areas of Galatina, Cutrofiano, Aradeo, Neviano, Secli’, Sogliano Cavour e Collepasso.

Galatina white is composed by Chardonnay for the 55%. Other kind of grapes can be used for its preparation, the ones with white berry from authorised grape growing and recommended areas In Lecce ’s province, up to 45 %.

Its colour is pale yellow with green reflexes; its sell is delicate and pleasantly fruity; its taste is dry, lively characteristic.

The alcoholic content is 11% and it must be drunk in a slender tulip at a service temperature of 10/11° C.

It’s a good aperitif over mixed starter, spaghetti with seafood, fish- based risottos, light soups with vegetables and soft cheese not too seasoned.

Galatina Chardonnay comes from 85% of Chardonnay grapes. Other kinds of grapes like the above can be present up to 15%.

It is pale yellow; its sell is delicate and pleasant and the taste is dry and strong.

It’s a good aperitif over light tasted starter, seafood, light and delicate vegetable- or fish-based soups, boiled or steamed fishes, soft cheeses with not a strong taste.

Galatina red and rose’ are made up of grapes from Negroamaro (at least 65%) with the addition of grapes with no spicy black berry recommended and authorised plantation In Lecce’s province.

They are up to 35%. Galatina rose’ is pink tending to delicate burgundy. Its smell is a bit strong and fruity. Its alcoholic content is 11.5% vol. and it must be drunk at a service temperature of 14/15° C. It is advisable to drink it over mixed starters, even with cured pork meats, fish- based soups with tomato sauce or roasted fish with sauces, white meat based light broths, slices of chicken and in general white meats of a delicate taste, soft cheese with few seasoning.

Galatina red has got a deep red colour with brick red reflexes if aged. Its smell is deep the taste is dry, strong, velvety and warm. Its minimum alcoholic content is 12° C and it must be drunk in a medium tulip glass at a temperature of 18 ° C.

It is advisable to drink it over pastasciutta, roast meat, roast poultry, meat based risottos and aged cheeses.

Galatina negroamaro is at least made of the 85% of grapes coming from grape growing lands negroamaro and for the remaining15% of o spicy grapes from recommended and authorised grape growing lands in Lecce’s province.

This wine can have the denomination of reserve if its alcoholic content is at least 12,5° C and it is aged 2 years at least.

Its colour is deep red with different degrees ad when it is aged, it has got brick red reflexes.

Its smell is pleasant ad deep with an elegant and harmonious taste. The whole alcoholic content is at least 12° C and it must be drunk in a medium tulip glass at a temperature of 18/ 20 ° C. It is advisable to drink it over meat based first courses, roast meats, aged cheeses. The reserve one, which has got a stronger, more velvet
